“Coup de Soleil” (mistelle)

Mistelle de Gamaret (mutated wine), a sweet red and sweet wine with aromas of small red fruits. Ideal as an aperitif or to accompany chocolate desserts and fruit tarts. Ruby red, sparkling. Its soft texture reveals the sweetness, the finesse of the vinification brings the necessary voluptuousness and balance. Serve chilled. Grapes harvested in small boxes, stored in a ventilated chamber for about 1 month, in order to have a high sugar concentration (evaporation of water). After pressing, an alcoholic fermentation is carried out which is blocked at ¾ by mutage, which consists of the addition of distilled wine. The Gamaret grape variety is perfect with this method of vinification called “mutated”. The strong characteristics of Gamaret allow a good balance between the sweetness of the method and the addition of wine marc. Clay and silty soil, moraine, grassy soil, steepslope.
